Vinification | The San Juan estate is on the path to the hermitage of San Juan del Codolar, in the Cornudella de Montsant valley, located between the Montsant and Les Gritelles mountains. Harvested manually in early October. Vinification with their own skins. Spontaneous alcoholic fermentation with native yeasts for 20 days at controlled temperature. Partial aging for 12 months in 225 liter barrels with their lees. |
Tasting note | Pale and bright color. Changing aromas in the glass, the notes of white fruit are enriched as the days go by and aromas of more ripe stone fruit such as apricot and quince appear. Memories of fresh honey and subtle mineral notes. In the mouth, it has an unctuous and wide attack. The mouthfeel leaves a soft sour trail of citrus, leaving a fresh finish of delicate touch that invites you to continue tasting. Wine made by palates looking for a white wine that can be tasted alone or in combination with a wide range of meals. White wine reminiscent of the elaboration of broken white wines made in the past with natural fermentations. |
